This is great way to eat pudding, guilt free and it's very simple to make....
So let's get cooking you good looking bunch
1 Tub Quark (250g)
3 Eggs (Medium)
4 tbsp Sweetener
Preheat oven to 180°C / 350°F / Gas Mark 4.
Beat the Quark in a bowl to make it smooth and creamy.
Add lemon rind and juice, egg yolks and 2 tbsp of the sweetener.
Add the mixture to a 3 or 4 small heatproof dishes . Bake for 10 minutes.
whip egg whites in a grease-free bowl and add 2 tbsp of sweetener to the mix - whisk until they hold their shape.
Return to oven to bake for 5 more minutes, until golden brown.
If you have any egg whites left, you can make them into meringues.
reduce the heat in the oven to about 100°C and bake for a bout and hour and a half
