What you're gonna need.....
4 small aubergines
2 handful of panko breadcrumbs
Sprinkle of shichimi togarashi or just some chili and sesame seeds
Pinch of salt
Sesame oil for brushing you aubers
1 rosted red pepper from a tin. drain it.
1 garlic clove - medium size or if you want it really garlicy then use a big one.
2 tblsp of miso - can be a red one or brown.
1 tsp of sesame oil
2 tblsp of rice vinegar
pinch of salt.
Pretty easy - cut the Aurbs into strips. Brush them with sesame oil, sprinkle the togorashi,salt and breadcrumbs and pop them in the over for around 10-15 mins on 180.
Miso dip - add all of the ingredients in a blender and blend them till it's smooth.
Plate the aubergines, rocket and feta and some of the red miso dip and enjoy
Simple, lovely snack.
