FISH TACOS WITH PINEAPPLE SALA & LIME CREMA x LIDL RECIPE

The best taco, I've ever had – Carol Peacock.

This recipe came to me after a few Tacos and Tequila in the popular night cafe - La Pantera, Cardiff.

I had a bottle of Tequila in the house ready to make some Watermelon Margaritas and I thought let's make some tacos.

You are going to love them, They take around 20 mins to make ( I also have a cheat version - So, read on for that )



The Ingredients

This is all you need to make this beautiful recipe


For the Fish batter :

  • 128g Plain Flour

  • 128g Soda Water or Beer

  • 3 Tbls of Fajita mix

  • Enough to fill half of your frying pan vegetable oil

  • Pack of cod - Normally comes with 2 fillets * This should be enough for 4, but if you'r family is like mine ( big eaters) You could add fries on the side or grab another pack of Cod and double the quantities to make the batter.

Pineapple Salsa

  • 4 rings of Pineapple ( from a tin)

  • half a red onion

  • handful of Coriander

  • Handful of Mint leaves

  • Half a red chilli * go for a whole one If you like it hot.

  • Salt & Pepper

  • Half a Lime

Lime Crema

  • 4 Tbls Natural Yogurt

  • 2 Tbls Sour Cream

  • Half a Lime

Extra

  • Taco wraps

  • Red cabbage

  • Avocado

  • Lime

  • Coriander


Let's get cooking darlings


  1. Chop and add all the pineapple ingredients into a bowl. We do this first so that the juice of the pineapple can absorb the flavours of the herbs and the onions. - Remember to season the salsa with salt and pepps.

  2. In another bowl add the Yogurt, Cream and Half a lime - Season the sauce with salt and pepps

  3. Pour the oil into the frying pan and pop the temperature up to 190. Use a thermometer for this, If you don't have one. Don't worry add some of the batter in, when you think it's hot. If it bubbles, It's ready. ( my beauts, please be careful with this hot oil, I don't want scars only smiles) .

  4. While the oil comes to temperature, add flour and fajita mix to a bowl and then add the soda/ beer. Whisk until light with no lumps. Cut the cod and give them a little batter bath, pop them in the batter for a minute and then pop them in the fryer until they are golden brown - This is a light batter, so the fish should cook within a couple of minutes.

  5. Warm the wraps, cut the cabbage & avocado - Build your delicious taco - add a squeeze of lime and a sprinkle of coriander to finish. YUMMY!
